Pálinka is the national brandy of Hungary, made exlusively from fruits (plum, apricot, strawberry, elderberry, apple, pear, etc) and considered to be a medicine from the fourteenth century.
Pálinka from Hungary
According to the regulation of the European Union (order 1-3-1576/89, 1 July 2002.), an alcoholic beverage may be called pálinka if:
- it is made exclusively from fruits, herbs or pomace indigenous to the Carpathian Basin region,
- is free of additional ingredients or additives,
- is grown, distilled and bottled in Hungary,
- its alcohol content is between 37.5% and 86% ABV

Pálinka history
Pálinka was referred as „Aqua vitae reginae Hungariae” by the King Charles I of Hungary and had its use in medicine, as both the king and the queen suffered from arthritis. In the 15th century, there were several places in Hungary – including Bártfa (Bardejov) – where pálinka (égettbor) was prepared in breweries.
By the 18th century, there were far more distilleries in Transylvania than breweries. Private distilleries and factories started to appear towards the end of the eighteenth century.
In Hungary, pálinka has an important role in family celebrations and social occasions. A widely-used Hungarian greeting is „Pálinkás jó reggelt!” meaning „Good morning with pálinka!„.
Pálinka consumption
Pálinka is best consumed at 18-20 °C. This is the temperature where the smells and tastes of the fruit can be best enjoyed. If served too cold, the smell and the taste will be difficult to notice.
Another important factor of the pálinka consumption is the type and form of the glass as it has a big influence on the drinking experience. The ideal shaped glass has a tulip form: wide bottom and narrow neck which leads the smell to the nose. The concentration of the smell will be more intensive, as the relatively big surface at the bottom will bemagnified by the narrow neck.
Preparation of Pálinka
The most popular pálinkas of Demeter Pálinka Manufaktúra are made from apricots, pears, apples and plums. Our more special palinka types are made of sweet and sour cherries, elderberries, strawberries and grapes. As quality of pálinka is largely influenced by the quality of the fruits used, Demeter Pálinka Manufaktúra chooses good quality fruits with a rich taste.
The first step in the production process is the preparation of the fruit mash which is followed by the fermentation in an anaerobic environment. for 10-15 days. The third step in the production process is the distillation in a column still.
